The Peach Gateaux is a round cake, with the bottom half of the cake comprising of a layer of vanilla sponge that is soaked in Orange flavored sugar syrup, a layer of peach mousse and a layer of peach pieces.

The top half of the gateaux comprises of more layers of sponge cake, peach mousse and peach pieces.

The entire cake is garnished with apricot gel and chopped peach, and is decorated with a border of fresh cream, red cherry and peaches.
